On a full moon, the Jasmine blooms. To make Good Tea the Old Way, one must heat the blooming Jasmine over charcoal and under the Green tea leaves. It is done overnight. It is a long, slow process. It is being lost to time. But we maintain the tradition.

Brewing Guide:
Use 3-5 pearls per 150ml glass teapot
Water temperature: 80°C (176°F)
First infusion: 2 minutes
Subsequent infusions: +30 seconds each (yields 3-4 steeps)

Special Recipe:
Jasmine Green Tea - Iced Honey Lemon Limeade
(Formulated by John, CH Creative Director and former Barista)
Ingredients:
- 10 Jasmine Pearls
- 300ml or 10oz of water in a measuring cup.
- Honey: 30g Lightly sweet, 50g medium sweet, 85g Sweet Tooth
- Lemon Lime Juice (1:1 Ratio): 8g to 15g based off Acidity or Sour tolerance.
- Metal mesh Strainer (used to squeeze lemon and lime juice, as well as strain the leaves out without a Gaiwan)
- Measuring cup in ML or OZ
- Gram accurate scale for honey and lemon lime juice
Directions:
- Steep 10 Jasmine Pearls in 10oz or 300ml of 80C water for as long as youd like. The longer it steeps, the more the jasmine will develop and sweeten. So 10 - 60 minutes.
- Strain out jasmine, save for plain tea.
- Mix in 30, 50, or 85 g of honey into water, stir thoroughly with a spoon, scrape the bottom to ensure mixture,.
- Once honey is stirred in, add 8 - 15g of Lemon juice. Stir thoroughly.
- While the mixture is in the measuring cup, add ice and stir. Some ice will melt. The recipe is concentrated to account for the melting of ice into water.
- Strain out the ice from the drink by pouring the measuring cup into another cup with ice. Mix the drink into the Ice cup.

Note: This 2015 vintage has developed deeper floral notes with age. Store in cool, dark place to maintain aroma.
